The richness of the pork belly is mixed with the sweetness of pineapple and the smokiness of paprika in this Cuban-style pork belly noodle bowl. Great for dinner, this dish is hearty and filling.
Ingredients:
- 1 lb pork belly, sliced into thin strips
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 cup pineapple chunks
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 2 tablespoons lime juice
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili flakes
- 8 oz cooked noodles of choice
- Salt and pepper to taste
- Chopped fresh cilantro for garnish
Instructions:
In a large skillet, heat olive oil over medium heat
Add pork belly slices and cook until browned and crispy, about 5-7 minutes
Remove pork belly from skillet and set aside
In the same skillet, add garlic and onion
Saut until softened, about 2-3 minutes
Add red and yellow bell peppers, cook for an additional 2-3 minutes
Stir in pineapple chunks, soy sauce, brown sugar, lime juice, cumin, smoked paprika, and chili flakes
Return the cooked pork belly to the skillet
Stir well to combine all ingredients
Simmer for 5-7 minutes, allowing flavors to meld together
Season with salt and pepper to taste
Serve the Cuban pork belly mixture over cooked noodles
Garnish with chopped fresh cilantro before serving
