This simple wild rice soup is warm and comforting, just what you need on a cold day. It will become a family favorite because it is full of healthy ingredients and has a creamy texture.
Ingredients:
- 1 cup wild rice
- 6 cups chicken or vegetable broth
- 2 cups diced cooked chicken breast
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup heavy cream
- 2 tablespoons all-purpose flour
Instructions:
Put wild rice and broth in a large pot
Bring to a boil, then lower the heat and let it cook for 45 minutes, or until the rice is soft
Add the onions, carrots, celery, and garlic to a different skillet and cook them until they become soft
Add chicken, thyme, parsley, salt, and pepper to the pot with the cooked rice
Also add the cooked vegetables
Let it cook for another 10 minutes
Mix heavy cream and flour together in a small bowl with a whisk until the mixture is smooth
Add to the soup and cook for five more minutes, or until it gets a little thicker
