These Slow Cooker Frijoles Charros Cowboy Beans are a hearty and tasty dish thats great for a party or a dinner during the week. When beans, bacon, and spices are cooked slowly and thoroughly, they make a delicious and comforting meal.
Ingredients:
- 1 lb dried pinto beans, rinsed and picked through
- 6 cups water
- 1 lb bacon, diced
- 1 large onion, diced
- 4 cloves garlic, minced
- 2 jalapeos, seeded and diced
- 2 tomatoes, diced
- 1/4 cup chopped cilantro
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
- Salt and pepper to taste
Instructions:
Place the dried pinto beans in the slow cooker
Add water, diced bacon, diced onion, minced garlic, diced jalapeos, diced tomatoes, chopped cilantro, ground cumin, and chili powder
Season with salt and pepper to taste
Stir well to combine all ingredients
Cover and cook on low for 8 hours or until beans are tender
Once cooked, taste and adjust seasoning if necessary
Serve hot, garnished with additional cilantro if desired
