Sunchoke Popsicles

Its different from other frozen treats to try these sunchoke popsicles. Sunchokes, which are also called Jerusalem artichokes, give these creamy treats a hint of sweetness and an earthy taste. You can make a cool and unique dessert thats great for summer with just a few easy-to-find ingredients.

Ingredients:

  • 2 cups peeled and diced sunchokes
  • 1/2 cup coconut milk
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract

Instructions:

Boil diced sunchokes until tender, then drain and let cool

In a blender, combine cooked sunchokes, coconut milk, maple syrup, and vanilla extract

Blend until smooth

Pour the mixture into popsicle molds

Insert popsicle sticks and freeze for at least 4 hours, or until solid

Once frozen, remove popsicles from molds and enjoy
