Ingredients:
- 2 cups peeled and diced sunchokes
- 1/2 cup coconut milk
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
Instructions:
Boil diced sunchokes until tender, then drain and let cool
In a blender, combine cooked sunchokes, coconut milk, maple syrup, and vanilla extract
Blend until smooth
Pour the mixture into popsicle molds
Insert popsicle sticks and freeze for at least 4 hours, or until solid
Once frozen, remove popsicles from molds and enjoy
