Quinoa Avocado Salad

A refreshing and nutritious quinoa salad with the creamy goodness of avocado, vibrant cherry tomatoes, and a zesty lemon dressing.

Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 large avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions:

In a medium saucepan, combine quinoa and water

Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until quinoa is cooked and water is absorbed

Fluff the quinoa with a fork and let it cool to room temperature

In a large bowl, combine cooked quinoa, diced avocado, cherry tomatoes, cucumber, red onion, and cilantro

In a small bowl, whisk together olive oil, lemon juice, salt, and pepper

Pour the dressing over the quinoa mixture and toss gently to combine

Refrigerate the salad for at least 30 minutes before serving to allow flavors to meld

Serve chilled and enjoy
