You can make this skillet stroganoff recipe in a light and easy way that is better for you. Its a guilt-free way to enjoy a tasty pasta dish because the heavy cream is replaced with Greek yogurt and lean ground beef is used instead.

Ingredients:

  • 1 lb lean ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 tbsp olive oil
  • 2 cups beef broth
  • 1 cup plain Greek yogurt
  • 2 tbsp all-purpose flour
  • 1 tsp paprika
  • Salt and pepper to taste
  • 8 oz egg noodles, cooked according to package instructions
  • Fresh parsley, chopped for garnish

Instructions:

Warm up the olive oil in a big pan over medium-low heat

Break up the ground beef with a spoon as it cooks until it turns brown

Cut up some onion, garlic, and mushrooms and add them to the pan

Cook the vegetables until they get soft

Mix the beef and paprika together and sprinkle it on top

Mix things together well

Add the beef broth and keep stirring until the mixture gets thick

Turn down the heat and let it simmer for 5 to 10 minutes

Add the Greek yogurt and mix it in well

Add pepper and salt to taste

Put the cooked egg noodles in the pan and mix them with the sauce by tossing them around
