These Peanut Butter Flaxseed Pancakes are a delightful twist on traditional pancakes. They are packed with the goodness of flaxseed and the rich flavor of peanut butter. Perfect for a hearty breakfast

Ingredients:

  • 1 cup all-purpose flour
  • 1/4 cup flaxseed meal
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup creamy peanut butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter
  • Additional butter or oil for cooking

Instructions:

In a large bowl, whisk together the flour, flaxseed meal, sugar, baking powder, baking soda, and salt

In another bowl, mix the buttermilk, peanut butter, egg, vanilla extract, and melted butter until well combined

Pour the wet ingredients into the dry ingredients and stir until just combined

Be careful not to overmix; some lumps are okay

Heat a non-stick skillet or griddle over medium-high heat and add a little butter or oil to coat the surface

Pour 1/4 cup of batter onto the hot skillet for each pancake

Cook until bubbles form on the surface, then flip and cook the other side until golden brown

Repeat with the remaining batter, adding more butter or oil to the skillet as needed

Serve the peanut butter flaxseed pancakes warm with your favorite toppings, such as maple syrup, fresh fruit, or extra peanut butter
