Ingredients:
- 2 cups all-purpose flour
- 1/2 cup vegan butter, cold and cubed
- 1/4 cup cold water
- 1/4 cup cocoa powder
- 1/4 cup maple syrup
- 1/2 cup vegan chocolate chips
- 1 tbsp cornstarch
- 1 tbsp water
Instructions:
Preheat your oven to 375F 190C
In a food processor, pulse together the flour and cold vegan butter until it resembles coarse crumbs
Slowly add in the cold water and pulse until the dough comes together
Divide the dough into two equal parts and roll each part out into a rectangle on a floured surface
Cut each rectangle into smaller rectangles, about 8x10cm in size
In a small bowl, mix together cocoa powder, maple syrup, cornstarch, and water to make the chocolate filling
Place a spoonful of chocolate filling onto half of the rectangles, leaving some space around the edges
Sprinkle vegan chocolate chips on top of the filling
Cover each filled rectangle with another rectangle of dough and press the edges to seal
Use a fork to crimp the edges for decoration and to ensure they are sealed tightly
Place the poptarts onto a baking sheet lined with parchment paper
Bake in the preheated oven for 15-18 minutes, or until the crust is golden brown
Allow the poptarts to cool before serving
Optional: Drizzle melted vegan chocolate on top for extra decadence
