This Paleo Cream of Mushroom Soup is a lightened-up version of the classic comfort food. Made with wholesome ingredients like mushrooms, coconut milk, and aromatic herbs, its creamy, flavorful, and satisfying without any dairy or grains.
Ingredients:
- 1 tablespoon ghee
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 pound mushrooms, sliced
- 4 cups chicken or vegetable broth
- 1 can full-fat coconut milk
- 1 tablespoon arrowroot powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions:
Ghee should be melted over medium heat in a big pot
Add the minced garlic and onion, and saut until transparent
Sliced mushrooms should be added and cooked until they release juices and begin to brown
To eliminate the raw taste, sprinkle arrowroot powder over the mushrooms and stir continuously for one to two minutes
Add the coconut milk and chicken or vegetable broth, and stir to mix
Season with salt, pepper, and dried thyme
To allow the flavors to meld, bring the soup to a simmer and cook for ten to fifteen minutes
Blend the soup with an immersion blender until its smooth, or leave it chunky if you prefer
Taste and adjust seasoning
