Slow Cooker Posole

A hearty and tasty posole that is easy to make in the slow cooker. A comforting and filling soup is made with tender pork, hominy, and a mix of spices.

Ingredients:

  • 1
  • 5 lbs pork shoulder, cubed
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 2 cans 15 oz each hominy, drained and rinsed
  • 1 can 28 oz diced tomatoes
  • 1 can 7 oz diced green chilies
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 6 cups chicken broth
  • Salt and pepper to taste
  • Fresh cilantro, chopped for garnish
  • Lime wedges for serving

Instructions:

In a skillet, brown the pork cubes over medium heat

Transfer the pork to the slow cooker

Add chopped onions, minced garlic, hominy, diced tomatoes, diced green chilies, oregano, cumin, smoked paprika, and chicken broth to the slow cooker

Season with salt and pepper to taste

Stir to combine

Cover and cook on low for 6-8 hours or until the pork is tender

Before serving, adjust the seasoning if needed

Serve hot, garnished with chopped cilantro and lime wedges
